Homemade berry cheesecake

This is a moist, delectable, and colourful easy-to-make cheesecake. It only uses 1 bowl and has a fruity, sweet-but-not-too-sweet flavour and a spongy texture.


Ingredients

Cake

  • 3 tablespoons of plain Greek yoghurt

  • 2 tablespoons of ricotta cheese

  • 2/3 of a cup of spelt flour

  • 1 teaspoon of salt

  • 1 lime

  • 1/2 of a cup of full cream milk

  • 2/3 of a cup of blueberries

  • 1 cup of brown sugar

  • 2 eggs

  • 1/4 of a cup of coconut flour

Compote/toppings

  • 1 & 1/2 cups of frozen berries

  • 1/2 of a cup of brown sugar

  • a handful of blueberries and strawberries


Method

Cake

  1. Preheat your oven to 180°C (356°F)

  2. In a medium bowl, add the spelt flour, coconut four, salt, and brown sugar.

  3. Grate in some lime zest.

  4. Whisk together all of the dry ingredients until there are no clumps.

  5. Add in the Greek yogurt, ricotta, milk, and eggs.

  6. Using a spoon, mix until a smooth batter forms.

  7. Oil a baking tray, then line it with baking paper (the oil will help the baking paper stick to the tray)

  8. Bake in the oven for 33 minutes or until an inserted knife/skewer comes out clean.


Compote/toppings

  1. Add frozen berries into a pan, and place the pan on the stove.

  2. Add in the brown sugar.

  3. Over a medium to high heat, mix the compote.

  4. Keep mixing every 5 minutes for 20 minutes.

  5. Layer the compote on top of the cake.

  6. Sprinkle on some fresh berries and extra lime zest.

Notes

  • let the cake cool before you eat it!

  • you don't necessarily have to eat the cake with the toppings, but that is how I think it is best enjoyed.
